Ingredients

  • 250g teba (chicken wings)
  • 1 tablespoon soy sauce
  • 2 tablespoons sake
  • 1 teaspoon sugar
  • 2 tablespoons mirin
  • 2 tablespoons salt (for cooking)
  • 1 teaspoon black pepper
  • 1 tablespoon sesame oil

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Separate the wings at the joint and remove tips if desired.
  3. Place the wings in a medium bowl and add the soy sauce, sake, sugar, mirin, salt, and black pepper and mix to coat the wings well.
  4. Place the wings on a baking sheet lined with parchment paper.
  5. Bake in preheated oven for 15 minutes.
  6. While baking, stir together the sesame oil and remaining salt for the shio seasoning.
  7. Take out the wings from the oven and let cool for a few minutes.
  8. Place the wings on a serving platter and sprinkle with the shio seasoning.
  9. Serve and enjoy!
