Ingredients

  • 200g frozen spinach, thawed and diced
  • 2 tablespoons of olive oil
  • 1 medium onion, finely diced
  • 1 clove of garlic, minced
  • 2 eggs, separated
  • 2 tablespoons of heavy cream
  • 1 tablespoon of parmesan cheese, grated
  • Pepper to taste
  • 2 tablespoons of all-purpose flour
  • 2 tablespoons of butter
  • 2 tablespoons of almond powder, ground

Directions

  1. Preheat your oven to 180°C (350°F).
  2. Heat the olive oil in a non-stick pan over medium heat.
  3. Add the onion and garlic and sauté until translucent (or until you make a joke and the onions make you cry 😂).
  4. Add the spinach and sauté for a few minutes until it is completely cooked.
  5. In a medium bowl, beat the egg yolks with a fork.
  6. Add the cream, parmesan cheese, and pepper to the egg mixture.
  7. Stir in the spinach mixture until combined.
  8. In a separate bowl, beat the egg whites until soft peaks are formed (you don’t want it to climb the bowl!).
  9. Gently fold the egg whites into the egg yolk mixture.
  10. Grease a shallow non-stick baking dish or an oven-proof dish.
  11. Spread the mixture evenly into the dish.
  12. Sprinkle the flour, butter, and almond powder over the top.
  13. Bake for 40-50 minutes or until a light golden-brown crust forms on the top of the tarte soufflée.
  14. Serve warm or at room temperature.
