Ingredients

  • 200g of cooked beetroot, peeled
  • A small red onion, finely chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of freshly squeezed lemon juice
  • A small bunch of fresh parsley, finely chopped
  • Optional if available: a tablespoon of chives, chopped
  • Salt and pepper, to taste

Directions

  1. Start by peeling your beets. Slice them into thin slices and then cut into small cubes.
  2. In a bowl, combine the cubed beetroot with the finely chopped red onion and mix.
  3. In a separate bowl, mix together the olive oil, the lemon juice, the parsley and the optional chives.
  4. Pour the dressing over the beetroot and onion and mix until all the ingredients are fully combined.
  5. Add salt and pepper to taste.
  6. Joke for the little ones: Place the tartare into small dishes and pretend like it’s a snow castle and you’re a giant!
  7. Serve the Tartare de Betterave chilled, in small bowls or plates.
