Ingredients

  • 8 small sized tortillas
  • 1 can of canned refried beans
  • 1 teaspoon of chili powder
  • 1/4 teaspoon of ground cumin
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of oregano
  • 1/4 teaspoon of paprika
  • 1/4 cup of cheddar cheese, grated
  • 1/2 cup of red onion, chopped
  • 1 medium sized tomato, diced
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 cup of diced avocado (optional)

Directions

  1. Preheat the oven to 400F.
  2. Wrap the tortillas in a damp paper towel and microwave on high for 45-60 seconds.
  3. In a medium size bowl, stir together the refried beans, chili powder, ground cumin, garlic powder, oregano, and paprika.
  4. Spread the mixture evenly over the tortillas and top with the grated cheese, red onion, diced tomatoes, and fresh cilantro.
  5. Place the tacos on a baking sheet and bake for 15 minutes until the cheese is melted and bubbly.
  6. Serve with a side of guacamole (optional) or diced avocado.
