Ingredients

  • 40g couscous
  • 400ml vegetable broth
  • 2 plum tomatoes
  • 2 spring onions
  • Juice of 1 lemon
  • 2 cucumbers
  • A small bunch parsley
  • A handful of mint leaves
  • 25ml olive oil

Directions

  1. Place a saucepan over medium heat and pour the vegetable broth.
  2. Once the vegetable broth is boiling, add the couscous to the pan and stir for a few seconds.
  3. Reduce the heat to low and cover the pan with a lid.
  4. Simmer for 10 minutes, stirring regularly.
  5. While the couscous is cooking, dice the tomatoes, spring onions, and cucumbers and finely chop the parsley and mint.
  6. Once the couscous is cooked, transfer it to a bowl and let it cool for a few minutes.
  7. Add the diced vegetables, herbs, lemon juice, and olive oil to the couscous and mix everything together.
