Ingredients
- 40g couscous
- 400ml vegetable broth
- 2 plum tomatoes
- 2 spring onions
- Juice of 1 lemon
- 2 cucumbers
- A small bunch parsley
- A handful of mint leaves
- 25ml olive oil
Directions
- Place a saucepan over medium heat and pour the vegetable broth.
