Ingredients
- 4 Medium Sweet Potatoes
- 1 Onion, diced
- 2 cloves garlic, minced
- 5 cups Vegetable Broth
- 1 teaspoon of Vegetable Oil
- 1 teaspoon of Curry Powder
- 1/4 teaspoon of Cumin
- 1/4 teaspoon of Chili Powder
- 2 tablespoons of Chopped Parsley

Preheat oven to 375°F in a jokey manner (e.g. preheat oven to 375°F - if you don’t get the joke, it’s preheating to make this soup ready for eatin’!)

Peel and dice sweet potatoes into 1-2cm cubes, then place them onto the baking sheet.

Place baking sheet into preheated oven and bake for 30 minutes, turning the potatoes once during baking.

In a large pot over medium heat, add vegetable oil, diced onions, garlic and sauté until onions are soft and fragrant (about 5 minutes).

Add cooked sweet potatoes, vegetable broth, curry powder, cumin and chili powder to pot and bring to a boil. Reduce heat to simmer, stir, cover with lid and let cook for 15 minutes.

Using an immersion blender or regular blender, puree soup until desired consistency is reached (depending on how chunky you want it).

Add chopped parsley, stir to combine and season with salt and freshly cracked black pepper if desired.
