Ingredients

  • 4 tablespoons vegetable oil
  • 2 tablespoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup sake
  • 1/2 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons packed brown sugar
  • 2 cups diced onion
  • 4 cups sliced shiitake mushrooms
  • 1 cup enoki mushrooms, trimmed
  • 1 (14-ounce) package firm tofu, cut into 1-inch cubes
  • 4 cups cooked short-grain white rice

Directions

  1. Heat vegetable oil in a large nonstick pan over medium-high heat.
  2. Add ginger and garlic, and let sizzle for 1 minute before adding sake. Stir until ingredients are combined.
  3. Add soy sauce, mirin, and brown sugar, then whisk until everything is fully incorporated.
  4. Add onion, and cook for 4 minutes, stirring occasionally.
  5. Add shiitake mushrooms and enoki mushrooms, and cook for 3 minutes, stirring occasionally.
  6. Add tofu, and cook for 5 minutes, or until tofu is lightly browned on all sides.
  7. Serve over cooked white rice.
