Ingredients

  • 2 cups (470 ml) of cold water
  • 2 tablespoons (20 ml) of soy sauce
  • 2 tablespoons (20 ml) of rice vinegar
  • 2 tablespoons (20 ml) of mirin
  • 1 tablespoon (10 ml) of sake
  • 4 cm of kombu kelp
  • 2 tablespoons (20 ml) of finely chopped spring onion
  • Variation: 2 tablespoons (20 ml) of finely chopped seaweed

Directions

  1. Begin by combining all of the ingredients for the soy sauce-based broth together in a medium-sized pot.
  2. Bring the mixture to a boil, then reduce the heat to a simmer and let it cook for 3-5 minutes.
  3. Remove the pot from the heat and carefully strain the broth.
  4. Divide the broth among three separate bowls, garnishing each bowl with a tablespoon of chopped spring onion or a sprinkle of seaweed (or both!).
  5. Serve your Suimono with a warm smile.

Suimono is delicious on its own, but you can add some extra flavour by serving it with some steamed white rice, pickles and some toasted nori seaweed. If you have an adventurous eater, feel free to try some unique sides like raw fish and/or boiled octopus. Yum!
