  • 200g arborio rice
  • 500ml vegetable broth
  • 200g fresh Steinpilz mushrooms, chopped
  • 1 small onion, finely diced
  • 1 clove of garlic, minced
  • 1 tbsp olive oil
  • 50g grated parmesan cheese
  • Fresh parsley, for garnish


  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and cook until they are soft and translucent, about 3-4 minutes.
  3. Add the chopped Steinpilz mushrooms to the saucepan and cook for another 5 minutes, stirring occasionally.
  4. Stir in the arborio rice and cook for 1-2 minutes, until the grains are well coated with the mushroom mixture.
  5. Slowly pour in the vegetable broth, 1 ladle at a time, stirring constantly until the liquid is absorbed before adding more. This will take about 20 minutes.
  6. Once all the broth has been absorbed and the rice is creamy and cooked through, remove from heat.
  7. Stir in the grated parmesan cheese until melted and well combined.
  8. Serve the Steinpilzrisotto in bowls, garnished with fresh parsley.
