Ingredients

  • 2 cloves of garlicminced
  • 2 tablespoons of olive oilplus more for greasing and brushing
  • 1 can of black beansdrained and rinsed
  • 2 red bell pepperschopped
  • 2 jalapeñosfinely chopped (optional)
  • 2 cups of cooked corn
  • 2 cups of shredded cheese
  • 2 tablespoons of fresh cilantrochopped
  • 8 8-inch flour tortillas
  • 1 limecut into wedges

Equipment

  • Cutting board
  • Knife
  • Measuring cup
  • Measuring spoon
  • Large skillet
  • Medium bowl

Instructions

  1. Set up a cutting boardknife and a large skillet. Heat the skillet over medium-high heat and add the olive oil.

  2. Once the skillet is hotadd the garlic and sauté for 1 minute until fragrant.

  3. Add the chop bell peppers and jalapeños to the skillet and cook until they are softabout 5 minutes.

  4. Add the drained and rinsed beans to the skillet and cook until heated throughabout 3 minutes.

  5. Transfer the mixture to a medium bowl and add the cooked cornshredded cheeseand fresh cilantro. Stir until all of the ingredients are evenly combined.

  6. To assemble the quesadillasassemble each quesadilla separately. Place a flour tortilla on your work surface and spoon one-eighth of the bean mixture onto half of the flour tortilla.

  7. Carefully fold the other half of the flour tortilla over the bean mixture and repeat these steps until all of the quesadillas are assembled.

  8. Grease the skillet with more olive oilheat it back over medium-high heat. Place two of the quesadillas in the skillet and cook for about 1 minute each sideuntil the flour tortillas are golden brown and the cheese has melted.

  9. Remove from the skillet and repeat these steps for the remaining quesadillas.

  10. Serve the quesadillas hot with some lime wedges.
