Ingredients

  • 250g of fresh clams, already cleaned
  • 240g of spaghetti
  • 1 garlic clove, finely chopped
  • 2 tablespoons of olive oil, extra virgin
  • 1 teaspoon of crushed red pepper
  • 2 tablespoons of chopped Italian parsley
  • Grated parmesan cheese, to taste

Directions

  1. Prepare the ingredients: Bring a large pot of lightly salted water to a boil, set aside.
  2. Clean the clams: Clean the clams under cold, running water for about 1-2 minutes.
  3. Cook the pasta: Cook the spaghetti in the boiling water according to instructions on the packaging, stirring occasionally for even cooking.
  4. Heat the oil: In a small saucepan, heat the olive oil over high heat.
  5. Add the other ingredients: When the oil is hot, add the garlic, crushed red pepper flakes and stir for a minute before adding the cleaned clams.
  6. Cook the clams: Cook the clams until they open (this will only take a few minutes).
  7. Add the spaghetti: When the clams are opened, add the spaghetti, lower the heat and let it cook for a few minutes, stirring gently so that all the ingredients are mixed together.
  8. Serve: Transfer the spaghetti vongole onto a large serving plate, sprinkle with parsley and grated parmesan cheese, and serve.
