Ingredients

  • 12 egg roll wrappers
  • 1 cup cooked and shredded chicken breast
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onions
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Cooking spray

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a large bowl, mix together the shredded chicken, black beans, corn, red bell pepper, green onions, cheddar cheese, cumin, paprika, and garlic powder. Mix well to combine all the ingredients.
  3. Lay out an egg roll wrapper on a clean surface. Place a spoonful of the chicken mixture in the center of the wrapper.
  4. Fold in the sides of the wrapper, then roll it up tightly. Use a bit of water to seal the edges of the wrapper.
  5. Repeat with the remaining wrappers and filling.
  6. Place the egg rolls on a baking sheet lined with parchment paper. Spray the tops of the egg rolls with cooking spray.
