Ingredients
- 3 medium courgettes (zucchini), thinly sliced
- 2 cloves garlic, chopped
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cups vegetable stock
- 2 teaspoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- Pepper to taste
Directions
- In a large soup pot, heat olive oil and butter over medium heat.
- Once melted, add onion and garlic and cook until soft, stirring occasionally.
