Ingredients

  • 3 medium courgettes (zucchini), thinly sliced
  • 2 cloves garlic, chopped
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cups vegetable stock
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Pepper to taste

Directions

  1. In a large soup pot, heat olive oil and butter over medium heat.
  2. Once melted, add onion and garlic and cook until soft, stirring occasionally.
  3. Add courgette slices and cook for a few minutes.
  4. Once softened, add the vegetable stock and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Add the thyme, parsley and pepper, to taste.
  7. Let cook for another 5 - 10 minutes until everything is soft and flavors have blended.
