Ingredients

  • 1/4 head cabbage (400g), finely shredded
  • 2 tablespoons olive oil (30g)
  • 1 large onion (150g), diced
  • 2 large carrots (150g), diced
  • 2 small potatoes (150g), diced
  • 1 small celery stalk (75g), diced
  • 1 leek (75g), diced
  • 4 cups of water (1L)
  • 2 cloves garlic (4g), minced
  • 2 tablespoons fresh thyme leaves (4g), finely chopped
  • 2 bay leaves

Directions

  1. Start off by heating the olive oil in a large pot over medium heat.
  2. Once the oil is hot, add in the onions and carrots and let them cook for about 5 minutes or until the vegetables are soft.
  3. Add in the potatoes and celery and cook for another 3 minutes.
  4. Add in the leek and cook for another 2 minutes.
  5. Add in the cabbage and mix everything together.
  6. Add in the water, garlic, thyme, and bay leaves to the pot.
  7. Let the soup come to a boil, then reduce the heat to low and let it simmer for about 30 minutes.
  8. Once the vegetables are soft, the soup is done.
  9. Remove the bay leaves and taste the soup, adding more salt and pepper if needed.
  10. Ladle the soup into bowls and serve with a sprinkling of fresh herbs.
