Ingredients

  • 3 large yellow onions
  • 2 tablespoons butter
  • 1 teaspoon olive oil
  • ½ teaspoon sugar
  • 2 cloves garlic
  • 2 teaspoons of dry thyme
  • 4 cups vegetable broth
  • 2/3 cup of grated Gruyere cheese or any hard cheese
  • 2 tablespoons of all-purpose flour
  • 2 bay leaves
  • Pinch of nutmeg
  • Salt and pepper

Directions

  1. Preheat your oven to 390°C (200°C).
  2. Slice the onions thinly.
  3. Melt the butter in a large pot over medium heat.
  4. Once melted, add the olive oil and onions (or, as your toddler might say, “add the slimy onions!”)
  5. Add the sugar and thyme, then sauté for about 10 minutes.
  6. Mince the garlic and add it to the pot. Cook for a minute more.
  7. Add the broth and bay leaves, and season with salt and pepper.
  8. Turn up the heat to bring to a boil, then lower the heat and let the mixture simmer for 10 minutes.
  9. While the soup is bubbling away, mix 2 tablespoons of flour and 2 tablespoons of butter together to form a thick paste.
  10. Take the soup mixture off the heat and stir in the paste until it has all broken up.
  11. Put the soupe à l’oignon gratinée into oven-safe bowls and top with grated cheese.
  12. Bake in the oven for 30 minutes, or until the cheese has melted and is golden.
