Ingredients

  • 1 cup sushi rice, cooked and cooled
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 cucumber, thinly sliced
  • 1 carrot, thinly sliced
  • 1 avocado, sliced
  • 4 sheets of nori (seaweed)

Directions

  1. In a small bowl, mix together the rice vinegar and honey until well combined. This will be your sushi vinegar.
  2. In a large mixing bowl, add the cooked sushi rice and pour the sushi vinegar over it. Gently fold the rice and vinegar together until the rice is well coated. Set aside.

  6. Repeat with the remaining nori sheets and ingredients.
