Ingredients

  • 200g paneer, cut into small cubes
  • 1 onion, finely chopped
  • 1/2 cup cashew nuts, soaked in water
  • 1/2 cup grated carrots
  • 1/2 cup peas
  • 1/2 cup diced tomatoes
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 cup coconut milk
  • 1 tbsp oil

Directions

  1. In a blender, blend the soaked cashew nuts with a little water until smooth. Set aside.
  2. Heat oil in a pan over medium heat. Add the onions and cook until they are soft and translucent.
  3. Add the tomatoes, turmeric powder, cumin powder, and coriander powder. Cook for 2-3 minutes until the tomatoes are soft.
  4. Add the grated carrots and peas. Cook for another 2-3 minutes.
  5. Add the blended cashew nut paste and coconut milk. Stir well to combine.
  6. Add the paneer cubes and garam masala. Cook for another 5 minutes until the paneer is heated through.
