  • 400g chicken breast, thinly sliced
  • 2 lemons
  • 200ml chicken broth
  • 100ml white wine
  • 50g all-purpose flour
  • 50g unsalted butter
  • Fresh parsley, chopped
  • Olive oil

Directions

  1. Start by preparing the chicken breasts. Place the chicken breast between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are about 1cm thick.
  2. In a shallow dish, season the flour with a pinch of black pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.
  3. Heat a large skillet over medium-high heat and add a splash of olive oil. Once hot, add the chicken breasts and cook for 2-3 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the white wine and scrape up any browned bits from the bottom of the pan. Let the wine simmer for a minute to cook off the alcohol.
