Savory Moroccan Pancake

Ingredients
- 2 cups plain or multigrain flour of your choice
- 1 teaspoon baking powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 2 cups non-dairy almond milk or other milk of your choice
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh cilantro
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced mushrooms
- 1/4 cup diced tomatoes

Begin by measuring out the flour, baking powder, cumin and coriander in separate bowls. Add a fun family joke while measuring out the ingredients!

In a large bowl, combine the flour mixture, baking powder and almond milk. Mix until no lumps remain. You can use a whisk or a food processor for this step.

Heat the olive oil in a large pan over medium heat. Add the diced onion, bell pepper, mushrooms and tomatoes. Saute until vegetables are cooked and softened (about 5 minutes).

Add the sauteed vegetables to the batter, and mix gently.

Heat a non-stick skillet over medium heat. Grease with a little olive oil to prevent sticking.

Spoon 1/4 cup of the batter onto the pan, and spread into a thin circle.

Cook for about 2-3 minutes until the edges are golden. Flip over and cook for another 2-3 minutes until the other side is golden as well.

Transfer to a plate and serve with your favorite side dish. Enjoy!
