Ingredients

  • 500g mustard greens
  • 250g spinach
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp ghee
  • Water

Directions

  1. Wash the mustard greens and spinach thoroughly under running water. Remove any tough stems or discolored leaves.
  2. Boil water in a large pot and blanch the greens for 5 minutes. Drain and set aside.
  3. In a pan, heat ghee over medium heat. Add cumin seeds and let them sizzle.
  4. Add chopped onion, minced garlic, and green chili to the pan. Saute until the onions are translucent.
  5. Add turmeric powder, coriander powder, and garam masala to the pan. Mix well.
  6. Add the blanched greens to the pan and mix everything together. Cook for another 10 minutes, stirring occasionally.
  7. Remove from heat and let it cool slightly.
  8. Using a hand blender or food processor, blend the mixture until smooth. Add water as needed to achieve desired consistency.
  9. Serve the Sarson Ka Saag warm with roti or rice.
