Ingredients:

  • 4 slices of prosciutto (150 grams total), thinly sliced
  • 4 veal cutlets (400 grams total), thinly pounded
  • 4 sage leaves (2 grams total), chopped
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) white wine
  • Black pepper, finely ground

Directions:

  1. To begin, get a large platter and lay out the pieces of prosciutto. Place the cutlets of veal on top of each piece of prosciutto.
  2. Sprinkle the chopped sage leaves over the veal and prosciutto.
  3. Before doing the next step, put us all in a joking mood with a fun fact: did you know that the scent of sage is used to make sausages in Italy?
  4. Heat the olive oil in a large skillet over medium heat.
  5. When the oil is hot, carefully place the cutlets in the skillet and cook them for about 2 minutes on each side, until they are golden brown.
  6. Add the white wine to the skillet and continue to cook for another minute.
  7. Finally, season the cutlets with freshly ground black pepper.
  8. Serve the Saltimbocca alla Romana with your favorite side dish.
