This recipe is easy to followand it’s a good one to share with the whole family. The chicken is roasted without any added salt or sugar and it will come out juicysucculent and delicious!

Ingredients

  • 1 whole chicken (2 kg)
  • 4 cloves of garlic (12 g)
  • 1 lemon
  • 2 tablespoons of olive oil (30 ml)
  • 2 teaspoons of rosemary (4 g)
  • 2 teaspoons of thyme (4 g)
  • 2 teaspoons of paprika (4 g)
  • 1 teaspoon of pepper (2 g)
  • ⅓ cup of white wine (82 ml)
  • ¼ cup of water (60 ml)

Preparation

  1. Preheat the oven to 200°C (392°F).
  2. Use a sharp knife to remove the giblets and any excess fat from the chicken.
  3. Place the chicken in a large roasting tray.
  4. Peel the garlic and cut into thin slices.
  5. Squeeze the juice from the lemon over the chicken.
  6. Place the slices of garlic over the chicken.
  7. Pour the olive oil over the chicken.
  8. Rub the rosemarythymepaprikaand pepper over the chicken.
  9. Pour the white wine and water into the bottom of the roasting tray.

Directions

  1. Place the chicken in the preheated oven and roast for 1 hour and 45 minutesbasting occasionally with the pan juices.
  2. After 1 hour and 45 minutesremove the chicken from the oven and turn the heat up to 220°C (428°F).
  3. Put the chicken back in the oven for 15 minutesor until the skin is nice and crispy.
  4. Take the chicken out of the oven and let it rest for 10 minutes before serving.
