A toddler-friendly recipe without salt or sugar and avoiding choking hazards
Ingredients
- 300g Salmon fillet
- 2 tablespoons olive oil
- 1 onionfinely chopped
- 2 cloves garliccrushed
- 2 tablespoons of finely chopped fresh parsley
- 50g cooked potatomashed
- 50g fresh breadcrumbs
- 1 small free range egg
Instructions
- Preheat oven to 200°C
- Line a baking tray with parchment paper
- Place salmon onto the traydrizzle with 1 tablespoon of olive oilseason with freshly cracked black pepper and bake for 12 minutes.
- Carefully remove the salmon from the oven and flake into a bowl
- Heat the remaining oil in a small pan over a medium heat. Add the onion and cook for 4 minutesstirring occasionally until the onion is softened
- Add the garlic and parsley and cook for a further one minute
- Remove from the heat and allow to cool
- Add the potatobreadcrumbsegg and cooled onion mix to the salmon bowl.
- Give it a good mixwith a wooden spoon or by hand if possible!
- Divide the mixture into 8 equal portionsshape into small patties and place onto baking tray
- Bake in the preheated oven for 10 minutes
- Serve with a joke: Why did the fish go to the doctor? Because it was feeling cod!
