Ingredients

  • 300g potatoes (3 medium sized)
  • 4 cups lettuce (1/2 head of white cabbage, chopped)
  • 150g beef, diced into cubes
  • 2 eggs, hard-boiled
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped

Directions

  1. Preheat a large skillet or grill for 7-8 minutes on medium heat.

  2. Add the beef cubes to the skillet/grill and cook for 3-4 minutes until lightly browned.

  3. Meanwhile, peel and dice the potatoes into small cubes.

  4. Boil the potatoes in a medium pot of salted water for 8-10 minutes until just tender.

  5. Drain the potatoes and transfer them to a large bowl.

  6. In the same pot, fill with cold water and bring to a boil, add eggs and cook for 9 minutes until hard boiled.

  7. Drain the eggs, transfer to a bowl of cold water to cool then peel and diced into cubes.

  8. Add the beef cubes, eggs, lettuce, onion, parsley, olive oil, vinegar and spices to the bowl with the potatoes.

  9. Mix everything together until everything is coated.

  10. Serve the salad warm or at room temperature.

Kid friendly tip: Add a joke here and there, like “What do you call an onion that’s been chopped up? An onion theater: it’s always packed!”

This salad is best served with a side of crusty whole wheat bread or a fresh green salad.
