Ingredients

  • 100g of green beans
  • 200g of potatoes
  • 2 eggs
  • 2 tomatoes
  • 2 tbsps of extra-virgin olive oil
  • 2 tbsps of white-wine vinegar
  • 4 anchovy fillets*
  • 1/2 large cucumber
  • Few black olives
  • 2 tbsps of capers
  • 2 cups of mixed greens

Directions:

  1. Preheat oven to 350°F (177°C).
  2. Start by boiling the potatoes and the green beans in separate pots. Boil the potatoes for 8-10 minutes, until they are soft enough to pierce with a fork. Boil the green beans for 3-5 minutes, until they are still slightly crunchy.
  3. Once potatoes and beans are boiled to desired texture, rinse with cold water to stop the cooking.
  4. Place the eggs in a small pot, fill it with cold water, and bring to a boil. After the water has boiled, turn the heat off and let the eggs sit in the hot water for 8 minutes. After the 8 minutes, take the eggs out and run under cold water before peeling.
  5. Slice the tomatoes into thin wedges.
  6. For the Dressing: In a small bowl, mix together the remaining olive oil, vinegar, and anchovy fillets*.
  7. Peel and slice the cucumber into thin slices and mix with the tomatoes and mixed greens.
  8. Now you’re ready to assemble the Salade Niçoise! Arrange the potatoes, green beans, boiled egg, cucumber, tomatoes, and mixed greens on top of a large plate.
  9. Add the anchovyfillets*, olives and capers to the top of the salad.
  10. Pour the dressing over the salad and serve chilled.

*Note: If your kids don’t like anchovies, you can skip this ingredient.
