Ingredients

  • 55g unsalted butter, room temperature
  • 110g all-purpose flour
  • 55g white sugar
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 drops vanilla essence
  • 110g semi-sweet chocolate, melted
  • 30ml of single cream
  • 60ml plum jam

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream the butter and sugar together with an electric mixer.
  3. Add the eggs, one at a time, beating them until they are just combined.
  4. Add the vanilla essence and mix until combined.
  5. In a small bowl, sift together the flour and baking powder.
  6. Gradually add the flour mixture to the wet mixture, taking care not to over mix (this is especially important for toddlers!)
  7. Grease a 8-inch round cake tin and line the bottom with parchment paper.
  8. Spread the mixture into the tin and bake in the preheated oven for 25 minutes, or until a skewer inserted into the middle comes out clean.
  9. Allow to cool for 10 minutes before transferring the cake to a cooling rack.
  10. While the cake is cooling, make the syrup by combining semi-sweet melted chocolate and single cream in a small bowl.
  11. When the cake has cooled completely, cover the top with the plum jam and then gently pour the chocolate syrup over the top.
  12. Allow to set before serving (and take lots of photos for the memories!).
