Sachertorte

Ingredients
- 55g unsalted butter, room temperature
- 110g all-purpose flour
- 55g white sugar
- 1 teaspoon baking powder
- 2 eggs
- 2 drops vanilla essence
- 110g semi-sweet chocolate, melted
- 30ml of single cream
- 60ml plum jam
Directions
- Preheat the oven to 350°F.
- In a large bowl, cream the butter and sugar together with an electric mixer.
- Add the eggs, one at a time, beating them until they are just combined.
- Add the vanilla essence and mix until combined.
- In a small bowl, sift together the flour and baking powder.
- Gradually add the flour mixture to the wet mixture, taking care not to over mix (this is especially important for toddlers!)
- Grease a 8-inch round cake tin and line the bottom with parchment paper.
- Spread the mixture into the tin and bake in the preheated oven for 25 minutes, or until a skewer inserted into the middle comes out clean.
- Allow to cool for 10 minutes before transferring the cake to a cooling rack.
- While the cake is cooling, make the syrup by combining semi-sweet melted chocolate and single cream in a small bowl.
- When the cake has cooled completely, cover the top with the plum jam and then gently pour the chocolate syrup over the top.
- Allow to set before serving (and take lots of photos for the memories!).
