Ingredients

  • 2 medium eggplants (400g total)
  • 180g ricotta cheese (avoid sugar added)
  • 25g grated parmesan cheese
  • 2 - 3 tablespoons oregano (chopped)
  • 2 - 3 tablespoons parsley (chopped)
  • 1 cup (240ml) milk
  • 1/2 cup (120ml) olive oil
  • 4 cloves of garlic (minced)
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Ground black pepper (to taste)

Directions

  1. Preheat the oven to 220 degrees Celsius (gas mark 7).
  2. Slice the eggplants lengthwise, into thin slices of 1/4 inch (5mm) thick.
  3. Place the slices on a baking sheet lined with parchment paper, drizzle with 2 tablespoons of olive oil, salt, and pepper.
  4. Bake in preheated oven for 15 minutes.
  5. Meanwhile, in a bowl, combine the ricotta cheese, parmesan cheese, oregano, and parsley.
  6. In a small saucepan, heat the milk and olive oil together over low heat until warm.
  7. Add the minced garlic and simmer for 5 minutes.
  8. Take the eggplant slices out of the oven and let them cool.
  9. Spread a thin layer of the ricotta mixture on each slice and roll them up.
  10. Place them in a greased baking dish.
  11. Pour the garlic-infused milk on top and sprinkle with a pinch of salt and ground black pepper.
  12. Bake in preheated oven for 30 minutes.
