Ingredients

  • 500g boneless lamb, cut into small cubes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 400g canned tomatoes, diced
  • 250ml low-sodium beef broth
  • Fresh coriander leaves, for garnish

Directions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic, ground ginger, ground cumin, ground coriander, paprika, turmeric, cinnamon, and cayenne pepper to the pot. Stir well to combine and cook for another 2 minutes.
  3. Add the diced tomatoes and beef broth to the pot. Stir everything together and bring to a simmer.
  4. Add the cubed lamb to the pot and stir to coat in the sauce. Cover the pot with a lid and let it simmer for 30 minutes, stirring occasionally.
  5. Remove the lid and let the curry simmer for another 10-15 minutes, or until the lamb is tender and the sauce has thickened.
  6. Serve the Rogan Josh hot, garnished with fresh coriander leaves.
