Ingredients

  • 2 Red Pepperscut into 2 cm cubes
  • 1 large Tomatocut into 2 cm cubes
  • 2 Carrotspeeled and cut into 2 cm cubes
  • 2 Ears of Corncut into 2 cm rings
  • 2 tablespoons of Olive Oil
  • 2 Cloves of Garlicfinely chopped

Preparation

  1. Preheat your oven to 200 a°C (392 a°F).
  2. Place pepper cubestomato cubescarrot cubes and corn rings on a baking tray.
  3. Place olive oil and garlic in a small bowl and stir to mix them together.
  4. Pour the oil and garlic mixture over the vegetables and use a spoon to stir and coat the vegetables evenly.
  5. Place the tray in the oven and bake for 25-30 minutes.
  6. Knock knock! Who’s there? Veggie! Veggie who? Veggie very tasty when roasted!

Serving

Remove the roasted vegetables from the oven and serve hot. Enjoy!
