Ingredients

  • 2 Sweet Potatoespeeled (260g)
  • 400g Sausage
  • 2 Garlic Clovesdiced
  • 2 Tablespoons of Olive Oil

Directions

  1. Pre heat the oven to 400 F (204 C).
  2. Peel the sweet potatoesmaking sure to remove all of the skin. Cut the sweet potatoes into bit sized cubes.
  3. Place the sausage and sweet potatoes in a large bowl and pour the olive oil over the ingredients. Mix until everything is evenly coated.
  4. Add the garlic and mix to combine.
  5. Line a baking sheet with parchment paper and spread the potatoes onto the baking sheet.
  6. Place the baking sheet in the pre heated oven and bake for 25 minutes.
  7. Remove the baking sheet from the oven and turn over the sweet potatoes and sausage. Bake for another 10 minutes or until the sweet potatoes are tender.
  8. Serve and enjoy!
