Ingredients:

  • 2 carrotspeeled
  • 2 tablespoons of harissa paste
  • 2 tablespoons of olive oil
  • Ground black pepperto your taste

Instructions:

  1. Preheat your oven to 220C (425F).
  2. Wash and scrub the carrotsthen peel them with a potato peeler. Slice the carrots into disks of an even thickness — any size is okayjust be sure they’re not too thick.
  3. Spread the carrots out into an even layer on a large baking sheet.
  4. In a small bowlmix together the harissa paste and olive oilthen pour over the carrots.
  5. Season with ground black pepper and make sure the carrots are evenly coated with the harissa and olive oil.
  6. Roast the carrots in the oven for 20 to 25 minutesstirring once or twice during cooking.
