Roasted Broccoli and Feta Tart

A deliciously tangy tart that risks becoming your family’s favorite meal! This recipe is child-friendly as it contains no added saltsugar and the ingredients are sized to avoid choking hazards.

Ingredients

  • 1 small red onionfinely chopped (150 g)
  • 2 cloves of garlicminced (3 g)
  • 2 tablespoons (30 ml) of extra-virgin olive oil
  • 1 large head of broccoli florets (600 g)
  • 2 tablespoons (30 ml) of lemon juice
  • 2 large egg yolks (60 g)
  • 2 tablespoons (30 ml) of non-fat Greek yoghurt
  • 2 tablespoons (20 g) of crumbled feta cheese
  • 2 sheets of ready-made shortcrust pastry (400 g)
  • 2 tablespoons (30 ml) of freshly grated Parmesan cheese
  • A pinch of black pepper

Instructions

1. Preheat the oven to 220°C (428°F)

This is the first step so you don’t switch off the oven before the tart is ready!

2. Heat a large non-stick skillet over medium heat

Now that the oven is preheatingget ready to cook your onion!

3. Add the red onion and garlic to the skillet and cook for 3 minutes

Just thinkthe smell will soon take over your kitchen and the onions will look like they’re dancing in the skillet!

4. Add the olive oil and stir

This will help the onions to caramelize and make them golden brown.

5. Add the broccoli florets

Be sure to add the broccoli florets to the skillet and stir everything together.

6. Sprinkle with the lemon juice

The lemon juice will give your tart a hint of zing!

7. Cook for 5 minutes

Let the ingredients cook until the broccoli is tender.

8. Whisk together the egg yolks and Greek yoghurt

Whisk them together in a large bowl until smooth.

9. Spread the egg and yoghurt mixture over the pastry sheet

Gently spread the mixture over the pastry sheettaking care not to tear it.

10. Sprinkle the fetaParmesan cheese and black pepper over the pastry

This is the best part! Sprinkle the fetaParmesan cheese and black pepper over the pastry for an extra dimension of flavor.

11. Arrange the broccoli and red onion mix over the top of the feta and cheese

Spread the vegetables and onion over the feta and cheese. They will brighten up the tart and make it look wonderful.

12. Bake in the preheated oven for 25 minutes

Sit backrelax and wait 25 minutes for your tart to be ready!

13. Serve and enjoy
