Ingredients

  • 2 medium potatoes
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon nutmeg

Directions

  1. Start with the potatoes: peel the potatoes, then grate them using a cheese grater.

  2. In a large bowl, mix the grated potatoes with the all-purpose flour, baking powder and nutmeg.

  3. Heat the vegetable oil in a large heavy skillet over medium heat. Joke: “The skillet should be really hot, just like daddy when he’s grilling on the barbie!”

  4. Using a spoon, scoop the potato mixture into the skillet and spread it out into thin, flat pancakes. Cook the pancakes for about 8 to 10 minutes, or until golden brown and crisp.

  5. Joke: “Make sure to flip ‘em over once in awhile to make sure they don’t burn or stick!”

  6. Serve the pancakes warm with a side of your favorite dipping sauce.
