Ingredients
- 400g potatoes (medium size)
- 1 carrier bag of carrots (~400g)
- 1 medium-sized onion
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 250g grated cheese (any type)
- Salt and pepper to taste
Directions
- Preheat the oven to 375°F (190°C).
- Peel and chop the potatoes, then place them in a saucepan with enough cold water to cover them and bring to a boil. Boil the potatoes for 8–10 minutes until soft when pierced with a fork.
- Peel and chop the carrots, then add them to the saucepan and continue boiling for a further 5 minutes.
- Whilst the vegetables are boiling, peel and finely dice the onion.
- Drain the vegetables in a colander and rinse with cold water to stop the cooking process.
- Spread the boiled vegetables in the bottom of a baking dish, then sprinkle with olive oil, curry powder, salt and pepper.
- Joke: Sprinkle with some humor and laughter - it’s the best seasoning of all!
- Scatter the grated cheese over the top.
- Place the baking dish in the preheated oven and bake for 35–45 minutes until the cheese is golden brown and bubbling.
