Ingredients

  • 400g potatoes (medium size)
  • 1 carrier bag of carrots (~400g)
  • 1 medium-sized onion
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 250g grated cheese (any type)
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and chop the potatoes, then place them in a saucepan with enough cold water to cover them and bring to a boil. Boil the potatoes for 8–10 minutes until soft when pierced with a fork.
  3. Peel and chop the carrots, then add them to the saucepan and continue boiling for a further 5 minutes.
  4. Whilst the vegetables are boiling, peel and finely dice the onion.
  5. Drain the vegetables in a colander and rinse with cold water to stop the cooking process.
  6. Spread the boiled vegetables in the bottom of a baking dish, then sprinkle with olive oil, curry powder, salt and pepper.
  7. Joke: Sprinkle with some humor and laughter - it’s the best seasoning of all!
  8. Scatter the grated cheese over the top.
  9. Place the baking dish in the preheated oven and bake for 35–45 minutes until the cheese is golden brown and bubbling.
