Ingredients

  • ½ cup Rajma (red kidney beans), washed, soaked overnight, and drained
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • ¼ teaspoon turmeric
  • 1 cup finely diced onions
  • 2 cloves garlic, chopped
  • 2-3 green chilies, chopped
  • 1 teaspoon ginger, chopped
  • 1 tomato, diced
  • 2 tablespoons freshly chopped coriander leaves
  • Salt, to taste

Directions

  1. Heat the oil in a saucepan over medium heat.
  2. Add the cumin, coriander, garam masala, and turmeric. Stir for a few seconds.
  3. Now add the onions and sauté until they turn golden.
  4. Add the garlic, green chilies, and ginger. Sauté for 1 minute.
  5. Now add the tomatoes and sauté for 4-5 minutes.
  6. Add the soaked Rajma and stir to combine everything.
  7. Add 1½ cups of water and stir.
  8. Bring to a boil and then reduce the heat to low. Cover and simmer for 20 minutes.
  9. Once the Rajma is cooked, add the freshly chopped coriander leaves and salt to taste.
  10. Serve hot with rice or roti.
