Ingredients

  • 500 g (2.2 lb) light pastry dough (no sugar)
  • 35 g (1.2 oz) butter
  • 2 tablespoons plain flour
  • 500 mL (2 c) semi-sweet cream
  • 2 tablespoons honey
  • 1 egg for brushing

Directions

  1. Preheat oven to 375°F (190°C, Gas Mark 5).

  2. Unroll the dough onto a lightly floured work surface. Cut into twelve 4-inch (10 cm) circles.

  3. Place circles on a lightly greased baking sheet.

  4. Mix butter and flour together until well blended.

  5. Divide mixture into twelve parts (this will make the rahmkäulchen look like little pies!)

  6. Place one part of the butter-flour mixture in the center of each of the circles, leaving a 1-inch (2.5 cm) border.

  7. Pour cream over the mixtures and spread evenly.

Fun Fact: Classic rahmkäulchen contain only cream and butter, no eggs!

  1. Brush the edges of the pastries with beaten egg.

  2. Bake for 25 minutes or until golden brown.

  3. Drizzle honey over pastries and let cool before serving.

These traditional German pastries pair great with a cup of coffee or tea, or for a healthier but equally delicious accompaniment why not serve with a fruit salad or yogurt topped with berries.
