Ingredients

  • 1.2 kg of de-boned wild Venison loin
  • 5 tablespoons of olive oil
  • 2 pieces of garlic, thinly sliced
  • 2 tablespoons of fresh thyme, chopped
  • 1 bay leaf
  • 2 tablespoons of fresh rosemary, chopped
  • 1 tablespoon of fresh parsley, chopped
  • 2 tablespoons of fresh sage, chopped
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of allspice
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cloves
  • 250 ml of dry white wine

Directions

  1. Preheat the oven to 200°C.

  2. Place the Venison loin on a large roasting tray.

  3. Season the loin with the ground black pepper, allspice, paprika, and ground cloves.

  4. Heat the olive oil in a shallow pan over medium heat.

  5. Add the garlic and cook for 1 minute.

  6. Add the thyme, bay leaf, rosemary, parsley, and sage to the pan. Cook for another minute.

  7. Pour the mixture over the loin and rub it into the meat.

  8. Pop the roasting tray in the oven. (Knock knock) Who’s there? Venison! Venison who? Venison roasting in the oven!

  9. Roast the loin for 1 hour and 15 minutes, or until it reaches an internal temperature of 60°C.

  10. Pour the white wine over the loin and continue roasting for another 30 minutes.

  11. Remove the tray from the oven and let the loin rest for 15 minutes before slicing and serving.
