Pumpkin & Black Bean Chili

Ingredients

  • 400g canned pumpkin puree
  • 400g canned black beansdrained and rinsed
  • 1 red onionfinely chopped
  • 2 cloves garliccrushed
  • 750g diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried cumin
  • 1/2 teaspoon ground black pepper
  • 1 liter vegetable stock

Preparation

  1. Start by preparing the vegetables. Peel and finely chop the onion and garlic.

  2. Add the canned pumpkin pureeblack beanschopped onion and garlicdiced tomatoesoreganocumin and pepper to a large pot and stir together.

  3. Pour in the vegetable stock and bring the mixture to a boil.
