Potée picarde is an easy and delicious French stew perfect for toddlers! This quick and healthy one-pot meal is packed full of flavour and nutrition with potatoes, leeks, carrots, bacon and more all simmered together in a savoury chicken broth. It’s a great way to introduce your toddler to a variety of new foods and introduce them to international flavours, making mealtime a fun and educational experience for the whole family!

Ingredients

  • 2 tablespoons of oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 400g diced carrots
  • 300g of potatoes, cut into cubes
  • 250g bacon lardons
  • 2 large chicken breasts, diced
  • 2 spoonfuls of tomato puree
  • 2 tablespoons of flour
  • 250ml of chicken stock
  • 150ml of white wine
  • 2 tablespoons of fresh parsley, chopped, plus extra to serve
  • 1 bay leaf
  • ½ teaspoon of fresh thyme
  • Pinch of ground black pepper

Directions

  1. Preheat the oven to 180°C (356°F).
  2. Heat the oil in a large ovenproof casserole dish, over a medium heat.
  3. Once the oil is hot, add the diced onion and garlic and sauté until the onion is softened and lightly browned.
  4. Add the diced carrots and potatoes to the casserole dish and sauté for a few minutes, stirring occasionally.
  5. Add the bacon lardons and diced chicken to the casserole dish and cook until lightly browned.
  6. Add the tomato puree, flour, chicken stock, white wine, parsley, bay leaf and thyme and stir until everything is combined.
  7. Bring the mixture to the boil and then reduce to a simmer.
  8. Place the lid on the casserole dish and transfer to the preheated oven.
  9. Bake for 45 minutes, until the vegetables are tender.
  10. Remove the casserole dish from the oven, remove the lid and sprinkle the parsley over the top.
  11. Serve with extra parsley for garnish.
