Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 500 milliliters vegetable broth
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 large potatoes, peeled and diced
  • 500 grams pork shoulder, cut into small cubes
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the garlic and onion and cook until softened, about 5 minutes.
  3. Add the vegetable broth, carrots, celery and potatoes. Bring to a simmer and cook 10 minutes.
  4. Add the pork cubes, rosemary and thyme and season with salt and pepper. Simmer for 1 hour.
  5. Serve.
