Ingredients
- 2 tablespoons of coconut oil
- 113g sliced green tamarind
- 1 garlic clove, finely chopped
- 2 teaspoons of black mustard seeds
- 114g chopped white onion
- 2 hot chillis, finely chopped
- 4 curry leaves
- 113g finely chopped carrot
- 2 tablespoons of freshly grated coconut
- Salt to taste
- 2 teaspoons of chopped coriander leaves
Directions

Heat the coconut oil in a large skillet over medium heat.

Add the tamarind slices and garlic. 🍆 Sauté for 2 to 3 minutes or until tender.

Add the mustard seeds, onion, hot chillies and curry leaves. 🌶️ Cook for 4 to 5 minutes or until the onion is translucent.

Add the carrot and sauté for 3 minutes or until slightly softened.

Add fresh grated coconut, stir to combine. 🥥

Add salt to taste.🧂

Cook for another 5 minutes or until the carrots are cooked through.

Add the coriander leaves and stir to combine. 🌿
