Ingredients

  • 2 tablespoons of coconut oil
  • 113g sliced green tamarind
  • 1 garlic clove, finely chopped
  • 2 teaspoons of black mustard seeds
  • 114g chopped white onion
  • 2 hot chillis, finely chopped
  • 4 curry leaves
  • 113g finely chopped carrot
  • 2 tablespoons of freshly grated coconut
  • Salt to taste
  • 2 teaspoons of chopped coriander leaves

Directions

  1. Heat the coconut oil in a large skillet over medium heat.

  2. Add the tamarind slices and garlic. 🍆 Sauté for 2 to 3 minutes or until tender.

  3. Add the mustard seeds, onion, hot chillies and curry leaves. 🌶️ Cook for 4 to 5 minutes or until the onion is translucent.

  4. Add the carrot and sauté for 3 minutes or until slightly softened.

  5. Add fresh grated coconut, stir to combine. 🥥

  6. Add salt to taste.🧂

  7. Cook for another 5 minutes or until the carrots are cooked through.

  8. Add the coriander leaves and stir to combine. 🌿

  9. Serve hot with some steamed white rice. 🍚
