Pintade aux pruneaux

Ingredients:
- 4 whole pintades (1.2 kg), skin removed
- 12 pruneaux (2.5 ounces)
- 2 tablespoons olive oil
- 2 cloves of garlic
- 2 large onions (220g), finely chopped
- 2 tablespoons fresh chopped parsley
- 1/2 teaspoon of freshly ground black pepper
- 2 sprigs of fresh rosemary
- 2 sprigs of fresh thyme
- 1 1/2 cups dry white wine
- Salt, for seasoning
Directions:
- Preheat oven to 375 degrees F (190 c).
- Pat dry the pintades with a paper towel.
- Rub each pintade with 1 tablespoon olive oil and season the outside with salt and pepper.
- Place the pintades in a roasting pan.
- Place the pruneaux and garlic around the pintades.
- In a bowl, mix the onions, parsley, rosemary, thyme, and remaining olive oil, and season with salt and pepper.
- Spread the onion mixture over the pintades and pruneaux.
- Pour the white wine over the top.
- Cover the pan with foil and bake in preheated oven for approximately 45 minutes.
- Uncover and continue baking for another 20 minutes, or until the pintades are done.
- Serve the Pintade aux pruneaux hot with sides.
