  • 1 whole pintade, cleaned and patted dry (about 1.5 kg)
  • 4 cloves garlic, minced
  • 10 black olives, pitted and halved
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 2 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Freshly ground black pepper
  • Pinch of nutmeg

Directions

  1. Preheat the oven to 350°F (176°C).

  2. In a small bowl, mix together the minced garlic, black olives, vegetable oil, butter, thyme, and parsley.

  3. Rub the mixture all over the pintade, making sure to get it into all the nooks and crannies.

  4. Season with freshly ground black pepper and a pinch of nutmeg.

  5. Place the pintade in an oven-safe dish and bake for about 45 minutes, or until the skin is golden brown and crispy and the internal temperature registers 165°F (74°C) on an instant-read thermometer.
