Mamma Mia! This risotto is so good it’ll make you say that!

Ingredients:

  • 120 g pearl barley
  • 1 large leek (white part only)
  • 1 tablespoon olive oil
  • 1 litre vegetable stock
  • pepperto taste

Instructions:

  1. In a large potheat the olive oil over a medium heat and add the pearl barley. Stir everything together until the pearl barley is nicely coated in the oil.

  2. Using a pair of scissors and funny facescut the leek into small pieces and add them to the pot. Stir it in with the pearl barley and let it cook for around 5 minutesstirring occasionally.

  3. Nowpour in the vegetable stock and turn up the heat. Let the stock come to the boil then reduce it back to a simmer. Give it a stircover and let it cook for 25 minutesstirring every once in a while.

  4. When the pearl barley is cookedturn off the heat and season with pepper. Serve it up with a pinch of freshly grated Parmesan (optional).
