Ingredients

  • 1 tablespoon oil of your choice
  • 1 small onion, diced
  • 1 medium pavakkai, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon turmeric
  • A pinch of chili powder
  • 1 cup tomato puree
  • 1 teaspoon tamarind paste
  • Salt to taste

Directions

  1. Heat oil in a pan over medium heat. Add onion and sauté for a few minutes until it starts to turn golden-brown.

  2. Add pavakkai, garlic and ginger to the pan and sauté for 6-8 minutes until the pavakkai is tender.

  3. Add all the dry spices (coriander powder, cumin powder, turmeric, chili powder), mix well and cook for 2 minutes.

  4. Add tomato puree and cook for 5 minutes until the sauce becomes thick and the pavakkai is cooked through.

  5. Add tamarind paste and salt to taste and cook for a further 1-2 minutes. Take it off the heat.
