Ingredients

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chilli powder
  • ⅛ teaspoon turmeric powder
  • 2 tablespoons tomato paste
  • 2 medium potatoes, peeled and cut into small cubes
  • 1 cup green peas
  • 2 small carrots, peeled and finely chopped
  • 1 small onion, finely chopped
  • 1 cup cauliflower florets
  • ½ cup diced capsicum
  • 2 green chillies, ground into paste
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon chaat masala
  • 2 tablespoons fresh lemon juice
  • 4 pav (dinner rolls)
  • Butter for the pav (dinner rolls)

Directions

  1. Heat the butter in a large pan over medium heat.
  2. Add the garlic and sauté for a few seconds.
  3. Add the cumin powder, coriander powder, chilli powder and turmeric powder.
  4. Add the tomato paste and mix it in.
  5. Add the potatoes, green peas, carrots, onion, cauliflower, capsicum and green chilli paste.
  6. Cover the pan and let it cook for 10 minutes, stirring occasionally.
  7. Uncover the pan and add the coriander leaves, chaat masala and fresh lemon juice.
  8. Continue to cook for another 5 minutes, or until the vegetables are cooked through.
  9. Take the pan off the heat and let it cool until it’s safe for the little chefs in the house.
  10. Let the kids help you assemble the pav bhaji: Butter the dinner rolls and place them in a plate. Be careful not to choke on the butter, kids!
  11. Serve the pav bhaji with the rolls and enjoy!
