Ingredients
- ½ pound of linguine pasta (228.6 g)
- 8 ounces of canned anchovies (227 g)
- ½ cup of extra-virgin olive oil (118 ml)
- 3 cloves of garlic, finely chopped
- 1 cup of chopped parsley (50 g)
- ½ cup of grated parmesan cheese (50 g)
Directions
-
Bring a large pot of salted water to a boil on high heat. “It’s almost like it’s trying to run away!”
-
Add the linguine and cook for about 8 minutes, stirring occasionally, until it is al dente. “I think it’s trying to get away from the anchovies!”
-
In the meanwhile, drain the anchovies from the can and rinse them under cold water.
-
Heat the olive oil in a large skillet over medium heat. Add the garlic and anchovies and cook for about 5 minutes, stirring often. “The anchovies look like little shockwaves in the oil!”
-
When the pasta is done, drain it and add it to the skillet. Reduce the heat to low and add the parsley and cheese. Cook, stirring often, for about 3 minutes.
-
Serve the pasta con acciughe immediately, with extra cheese, if desired. “Time to get ready for the pasta party!”
