Pasta Primavera

Ingredients
- 200g linguine pasta
- 4 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced into wedges
- 2 cups fresh spinach leaves
- 1/2 cup vegetable broth
- 2 teaspoons dried oregano
- 1/2 teaspoon black pepper
- 1 tablespoon grated Parmesan cheese, plus more for garnish
Directions

Fill a pot with water and a pinch of salt and bring to a boil over high heat.

While the water is heating, heat the olive oil in a large skillet over medium-high heat.

Once the oil starts to shimmer, add the onion and garlic and sauté until the onion is tender, about 3 minutes.

Add the zucchini and tomatoes and cook until the vegetables are lightly browned, about 5 minutes.

Add the spinach and stir until it is wilted, about 1 minute.

Add the vegetable broth, oregano, and black pepper and stir until combined. Reduce heat to low, and let the sauce simmer for about 5 minutes.

Meanwhile, add linguine to the boiling water and cook for 10-12 minutes.

Once the pasta is done cooking, drain the water and add the pasta to the sauce and stir to combine.

Serve with a sprinkle of Parmesan cheese.
