Ingredients

  • 2 cups whole wheat flour
  • 200ml warm water
  • 1 teaspoon oil
  • 1 teaspoon of butter
  • 2 tablespoons of coriander leaves
  • 1/2 teaspoon cumin powder
  • 1 small finely chopped onion
  • 1 small finely chopped gourd
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt to taste
  • Oil for cooking

Directions

  1. Start by making the dough for the paratha. In a bowl, mix together the whole wheat flour, 1 teaspoon of oil, salt and 200ml of warm water. Knead the dough until it’s firm and non-sticky.
  2. Divide the dough into two equal portions and shape them into balls. Flatten each ball with your hands, then roll each of them out into a circle of 6 inches in diameter.
  3. In a separate bowl, mix together the coriander leaves, cumin powder, onion, gourd, turmeric powder, red chilli powder, and some salt.
  4. Take one of the flattened circles and spread half of the mixture evenly over the surface, leaving a gap of ½ inch on the edges.
  5. Now roll the dough along the length with your fingers, sealing the edges together. Gently flatten the roll and set it aside.
  6. Repeat the same process with the second flattened circle and the remaining mixture.
  7. Heat a heavy based pan over a medium flame and add a teaspoon of oil and the butter.
  8. Place the paratha rolls on the pan and fry until they are crispy and golden brown on both sides.
  9. Serve the paratha roll hot with some tomato ketchup or a yogurt based dip.
