Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon cumin powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon salt
  • 1 teaspoon oil
  • ¼ cup yogurt
  • ½ cup cold water
  • 2 ½ cups vegetable oil for frying

Directions

  1. In a large bowl, mix together the all-purpose flour, cumin powder, turmeric powder, and salt.
  2. Drizzle in the oil, stir to combine, and then create a well in the center.
  3. Pour the yogurt into the well, and then slowly begin to add the cold water while using a wooden spoon to mix everything together.
  4. Once the dough is completely combined, knead it for a few minutes on a clean, lightly floured surface.
  5. Form the dough into a ball, cover with plastic wrap, and let the dough rest for 45 minutes.
  6. Once the dough has finished resting, divide it into small balls (about the size of a golf-ball). Use a rolling-pin to roll out the dough until it’s about ⅓ inch thick.
  7. Use a biscuit cutter or a glass to cut the dough into small circles and then place the circles on a floured plate.
  8. Heat the oil in a large pot over medium heat.
  9. Fry the circles of dough in batches until they become golden-brown. (Make sure to keep an eye on the dough so it doesn’t burn!)
  10. Remove the pani puri from the oil and transfer them to a paper towel-lined plate.
  11. To assemble the pani puri: Place a small spoonful of yogurt sauce onto each pani puri and then top with chopped vegetables.
  12. Serve the pani puri while they’re still hot and crispy!

**Hmmm, I wonder if I can create a superhero out of pani puri? I instead of the Pani, Mani and Puri, it can be Panini, Puri and Curry!
